Hairnets
or Hats?
The Ohio Food Code states "Food employees (an individual working with
unpackaged food, food equipment or utensils, or food-contact surfaces) shall
wear hair restraints such as hats, hair coverings or nets, beard restraints,
and clothing that covers body hair, that are designed and worn to effectively
keep their hair from contacting exposed food; clean equipment, utensils,
or linens; or unwrapped single-service or single-use articles. This provision
does not apply to food employees such as counter staff who only serve beverages
and wrapped or packaged foods, hostesses, and wait staff if they present
a minimal risk of contaminating exposed food; clean equipment, utensils,
or linens; or unwrapped single-service or single-use articles."

In the past, restaurants and other food establishments, such as grocery
stores, were licensed and inspected by two different agencies, the Ohio
Department of Health (ODH) or the Ohio Department of Agriculture (ODA).
Health departments at the local level only licensed those under ODH rules.
Problems arose when establishments were licensed by both ODA and ODH. In some cases, these rules were in conflict with each other, making it impossible to comply with both sets of rules.
Since March 1, 2001, Ohio has a Uniform Food Safety Code. All retail food establishments have the same rules and are inspected by the local health department. This means the addition of 40 new locations to the 180 currently under our licensing system. This also means more inspections during each licensing period, with each location being visited at least twice a year and some at least four times a year.
